Cheeseburger Casserole // Three 31 (a blog)

Who doesn’t love cheeseburgers and tator tots? This is not the healthiest meal in the world, but it’s one of the most flavorful and easy to prepare. With just six ingredients, dinner can be served in 45 minutes or less.

Addendum: This dish makes a great freezer meal to prepare now and eat later.

*serves 6

1 small sweet onion, finely chopped
1 tablespoon butter
2 pounds lean ground beef
2 cans low-sodium, reduced-fat Cream of Chicken soup
2 cups of shredded or sliced Cheddar cheese
Frozen tator tots

Preheat oven to 400 degrees.

In a large skillet over medium heat, saute onions in butter until translucent, about five minutes. Add ground beef and cook until no longer pink, about 10 minutes. Drain grease before adding soup. Stir well.

Pour mixture into baking dish and top with cheese, then arrange frozen tator tots in a single layer.

Cover prepared dish tightly with aluminum foil and freeze. When ready to serve, thaw before baking.

Bake (uncovered) 30-40 minutes, until potatoes are crispy and golden brown. Let cool 5-10 minutes before serving.

      I’m so happy ….. it’s amazing the resurgence this post has received lately. I made several casseroles back in June to put in the freezer and I prepared one for a women’s study group last week and it tasted just as fresh as if I had prepared it that day. It’s really good! Really tasty! And it reminds me of dinner at home with my parents. Enjoy!!!!!!!
