A Mini-Thanksgiving Bacon Feast

Husband and I had a wonderful Thanksgiving last week with his family in East Texas. We ate more food than I’ll admit but there was one key item missing from the holiday table: turkey. The baked ham and BBQ’d brisket were delicious, don’t get me wrong. But I missed turkey on Turkey Day.

My solution: prepare a mini-Thanksgiving feast just for Husband and I. Yesterday, I fixed two of Husband’s favorite side dishes (green bean casserole and creamy mashed potatoes) and my Mom’s cranberry relish. The star of our mini-feast was not a whole turkey, but a bone-in turkey breast. To make it extra special, I wrapped it with bacon.

You know it’s seriously good bacon when your Daddy’s name is on the label.

Dear God, thank you for reminding Noah to load a pair of pigs onto his Ark. Amen.

Fact: According to really awesome (but unlicensed) doctors, bacon is good for you.

Fact: Bacon makes your house smell like Heaven.

Fact: Bacon is meat candy. It goes with all foods and should be eaten at all times of the day. And added to creamy mashed potatoes.

Fact: You can’t buy happiness, but you can buy bacon and that’s better.

Fact: Bacon is the reason I am not a vegetarian.

Fact: Good things come to those who eat bacon.

Fact: The only thing better than bacon is more bacon.

Imagine how awesome your life would be if smell-a-vision existed.

    But you didn’t mention where the green beans came from. Mother is disappointed!!!!
    Glad you enjoyed the bacon, nothing like the bacon from Yoder’s.

      Because I cheated on the green bean casserole and did NOT use the good ones. Instead, I doctored up the canned ones with onions and bacon bits and let them cook most of the afternoon. =)

        I know! I failed at my resolution to visit. I’m putting you back on the list for 2013. But then you have to come to the beach, too! There’s an extra bicycle here waiting for you. =)
